- Remove the milk from the heat and let it cool slightly until lukewarm. It's important for the milk to be at the right temperature—too hot and it will kill the starter culture; too cold and the yogurt won't set properly.
- Stir in the brown sugar and ground cardamom until the sugar is dissolved. The warm milk helps dissolve the sugar quickly and evenly distribute the cardamom's flavor.
- Add the yogurt starter to the sweetened milk. Gently whisk to combine thoroughly, ensuring the starter is evenly distributed for proper fermentation.
- Pour the mixture into a clean clay pot. The clay pot helps regulate temperature and imparts a subtle earthy flavor to the yogurt.
- Place the clay pot in a warm, dry place, undisturbed, for 6-7 hours, or overnight, especially during colder months. In warmer weather, 2-3 hours may suffice. Avoid shaking or moving the pot during this setting period to allow the yogurt to ferment properly.
