Prepare the Spinach

  • Wash the spinach thoroughly and blanch it for about 1 minute in boiling water. Immediately plunge into an ice bath to stop the cooking process. Drain well and squeeze out excess water.

Combine Ingredients in Food Processor

  • Add the cashews to a food processor and pulse a few times until finely crumbled.
  • Add the blanched spinach, coriander leaves, garlic cloves, lemon juice, salt, and black pepper to the food processor. Pulse until finely chopped and combined.

Add Cheese and Olive Oil

  • With the food processor running, slowly drizzle in the olive oil and grated Parmesan cheese until a smooth, creamy pesto forms. Add more olive oil if needed to reach your desired consistency.

Adjust and Serve
