Ingredients
For the Rice Pudding
- 1/2 cup Basmati Rice
- 6 cup Milk whole milk, full-fat recommended
- 1/2 cup Milk condensed
- 1/2 cup Sugar adjust to your sweetness preference
- 1/2 tsp Cardamom Powder ground cardamom, freshly ground is best
- 1/4 cup Almonds slivered, blanched
For Garnish
- 1/4 cup Almonds slivered, toasted
- 1/4 cup Pistachios whole, shelled, toasted
- 2 tbsp Water for rinsing rice
Instructions
Prepare the Rice
- Rinse 1/2 cup basmati rice under cold water until the water runs clear. Soak the rice in 2 tablespoons of water for at least 20 minutes.
Cook the Rice Pudding
- In a heavy-bottomed pan or pot, bring 6 cups of whole milk to a gentle simmer over medium heat. Add the soaked rice and reduce heat to low.
- Simmer gently for 20-25 minutes, stirring frequently to prevent sticking and burning. The rice should be tender and creamy.
- Stir in 1/2 cup condensed milk, 1/2 cup sugar, and 1/2 teaspoon cardamom powder. Continue to simmer for another 5-7 minutes, or until the kheer thickens to your desired consistency.
- Stir in 1/4 cup slivered, blanched almonds.
Serve and Garnish
- Remove from heat and let the kheer cool slightly. Serve warm or chilled. Garnish with toasted slivered almonds and pistachios before serving.
