Ingredients
 

For the Rice Pudding

  • 1/2 cup Basmati Rice
  • 6 cup Milk whole milk, full-fat recommended
  • 1/2 cup Milk condensed
  • 1/2 cup Sugar adjust to your sweetness preference
  • 1/2 tsp Cardamom Powder ground cardamom, freshly ground is best
  • 1/4 cup Almonds slivered, blanched

For Garnish

  • 1/4 cup Almonds slivered, toasted
  • 1/4 cup Pistachios whole, shelled, toasted
  • 2 tbsp Water for rinsing rice

Instructions
 

Prepare the Rice

  • Rinse 1/2 cup basmati rice under cold water until the water runs clear. Soak the rice in 2 tablespoons of water for at least 20 minutes.

Cook the Rice Pudding

  • In a heavy-bottomed pan or pot, bring 6 cups of whole milk to a gentle simmer over medium heat. Add the soaked rice and reduce heat to low.
  • Simmer gently for 20-25 minutes, stirring frequently to prevent sticking and burning. The rice should be tender and creamy.
  • Stir in 1/2 cup condensed milk, 1/2 cup sugar, and 1/2 teaspoon cardamom powder. Continue to simmer for another 5-7 minutes, or until the kheer thickens to your desired consistency.
  • Stir in 1/4 cup slivered, blanched almonds.

Serve and Garnish

  • Remove from heat and let the kheer cool slightly. Serve warm or chilled. Garnish with toasted slivered almonds and pistachios before serving.
