  • 1 medium Potato peeled and chopped
  • 1 cup Pea fresh or frozen, green
  • 1/2 cup Fenugreek fresh leaves
  • 1 medium Onion finely chopped

Instructions
 

Sauté Aromatics

  • Heat vegetable oil in a saucepan over medium heat. Add the finely chopped onion and cook until softened and translucent, about 5 minutes.

Bloom Spices

  • Stir in the garam masala and cinnamon powder. Cook for 1 minute, stirring constantly, until fragrant.

Simmer Soup

  • Add the chopped potatoes and vegetable stock (or water). Bring to a boil, then reduce heat and simmer for 10 minutes.

Add Remaining Ingredients

  • Stir in the salt, green peas, and fenugreek leaves. Return to a simmer and cook until the peas and potatoes are tender, about 5-7 minutes.

Blend the Soup

  • Remove from heat and carefully blend the soup using an immersion blender or a regular blender (in batches if needed) until smooth and creamy.

Garnish and Serve

  • Garnish with a pinch of chili flakes. Serve hot, optionally with toasted garlic bread.
