Ingredients
Vegetables
Spices & Seasoning
- 1 tbsp Garam Masala
- 1/4 tsp Cinnamon powder
- 1.5 tsp Salt or to taste
- Pinch Chili Flake for garnish
Liquids & Fats
- 1 tbsp Vegetable Oil
- 2 cup Vegetable Stock or water
Instructions
Sauté Aromatics
- Heat vegetable oil in a saucepan over medium heat. Add the finely chopped onion and cook until softened and translucent, about 5 minutes.
Bloom Spices
- Stir in the garam masala and cinnamon powder. Cook for 1 minute, stirring constantly, until fragrant.
Simmer Soup
- Add the chopped potatoes and vegetable stock (or water). Bring to a boil, then reduce heat and simmer for 10 minutes.
Add Remaining Ingredients
- Stir in the salt, green peas, and fenugreek leaves. Return to a simmer and cook until the peas and potatoes are tender, about 5-7 minutes.
Blend the Soup
- Remove from heat and carefully blend the soup using an immersion blender or a regular blender (in batches if needed) until smooth and creamy.
Garnish and Serve
- Garnish with a pinch of chili flakes. Serve hot, optionally with toasted garlic bread.
