- 8 oz Pasta your favorite shape, or fettuccine, rotini, such as penne
- 1 cup Cottage Cheese cubed
- 1/2 cup Mozzarella Cheese shredded
White Sauce
- 2 tbsp Butter
- 1 Onion finely chopped
- 2 tbsp All-Purpose Flour also known as maida
- 2 cup Milk whole milk recommended for creaminess
- 1 tbsp Heavy Cream optional, for extra richness
Instructions
Prepare the Pasta
- Cook pasta according to package directions until al dente. Drain and set aside.
Make the White Sauce
- Heat olive oil in a pan over medium heat. Add chopped onion and sauté for 1-2 minutes until softened.
- Add butter to the pan. Once melted, whisk in all-purpose flour and cook for 1 minute, stirring constantly to create a roux.
- Gradually whisk in milk, ensuring no lumps form. Continue whisking until the sauce thickens slightly.
- Stir in heavy cream (if using), oregano, salt, and pepper. Cook for another 2-3 minutes, or until the sauce reaches your desired consistency.
Combine and Serve
- Add the cooked pasta and paneer to the white sauce. Gently stir to combine.
- Stir in mozzarella cheese until melted and creamy.
- Serve immediately, garnished with extra oregano or a sprinkle of Parmesan cheese if desired.
Recipe Notes
Expert Tips for the Perfect Creamy Paneer Pasta
- For an extra flavorful sauce, use homemade vegetable or chicken stock instead of all the milk.
- Don't overcook the pasta! Al dente pasta holds its shape better in the creamy sauce.
- Feel free to experiment with spices! Add a pinch of red pepper flakes for a touch of heat, or a dash of nutmeg for warmth.
- If the sauce is too thick, add a little more milk or cream to adjust the consistency. If it's too thin, simmer for a few more minutes until it thickens.
