Ingredients
For the Mango Preparation
- 2 medium Mangoes ripe, but firm; ataulfo or alphonso mangoes recommended
For the Raita
- 1 cup Hung Yogurt also known as greek yogurt; strained yogurt for a thicker consistency
- 2 tbsp Mayonnaise
- 1 tbsp Heavy Cream fresh, heavy cream for richness
- 2 tbsp Sugar powdered
- 1 tsp Olive Oil adds a subtle depth of flavor
- 1/2 tsp Pepper freshly ground, for a hint of spice, white
- 1/2 tsp Salt to taste; adjust according to your preference
Instructions
Prepare the Mangoes
- Peel and dice the mangoes into small, bite-sized cubes. Set aside.
Hang the Curd (Optional but Recommended)
- Line a fine-mesh sieve or colander with cheesecloth. Place the yogurt in the lined sieve and let it hang for at least 3-4 hours, or overnight, to drain excess whey. This will create a thicker, creamier raita.
Make the Raita
- In a medium bowl, beat the hung curd (or Greek yogurt) until smooth and creamy.
- Add the mayonnaise and heavy cream to the hung curd. Mix thoroughly until well combined.
- Stir in the olive oil, powdered sugar, white pepper, and salt. Mix until everything is evenly distributed.
- Gently fold in the diced mangoes. Mix gently to avoid mashing the mango pieces.
Serve
- Refrigerate the Mango Raita for at least 30 minutes to allow the flavors to meld. Serve chilled, garnished with extra mango pieces or chopped nuts (optional).
Recipe Notes
Expert Tips for the Best Mango Raita
- For the best flavor, use ripe but firm mangoes. Overripe mangoes can make the raita too watery.
- If you don't have time to hang the curd, you can use full-fat Greek yogurt as a substitute. Just ensure it's well-drained.
- Adjust the amount of powdered sugar to your liking. Some mangoes are naturally sweeter than others.
- For a more sophisticated presentation, garnish with chopped pistachios or a sprinkle of cardamom powder.
