Ingredients
For the Aamrakhand Base
- 500 ml Yogurt plain yogurt, preferably whole milk or low-fat greek yogurt. strain for a creamier texture (see instructions).
- 150 ml Mango Puree use ripe alphonso mangoes for the best flavor. you can also use other varieties of mangoes.
- 8 tsp Sugar adjust to your sweetness preference. honey or maple syrup can be substituted.
- 1/4 tsp Nutmeg finely ground
- 1 tsp Cardamom Powder ground cardamom (elaichi)
For Garnish
- 8 strands Saffron Strands optional, for color and aroma
- 25 gm Nuts chopped pistachios, almonds, and raisins. adjust to your preference., cashews, mixed
Instructions
Prepare the Yogurt
- Strain 500ml of yogurt in a muslin cloth or fine-mesh sieve for 4-5 hours to drain excess whey. This creates a thicker, creamier aamrakhand.
Combine Ingredients
- In a bowl, gently whisk together the strained yogurt, 8 tsp sugar, and 1/4 tsp of ground nutmeg until smooth and well combined.
Add Mango and Spices
- Stir in 150ml mango puree and 1 tsp of cardamom powder. Fold in the chopped mixed nuts.
Freeze and Garnish
- Pour the mixture into a freezer-safe container. Freeze for at least 4-5 hours, or until solid. Before serving, garnish with saffron strands and extra chopped nuts if desired.
Serve
- Serve the Aamrakhand ice cream chilled. Enjoy!
