Ingredients
Lentils and Beans
- ¾ cup Lentils black, split, urad dal
- ¼ cup Kidney Beans rajma, red
Spices and Aromatics
- 2 tsp Cumin Seeds
- 2 in Ginger chopped, fresh
- 8 clove Garlic chopped
- 1 Onion chopped
- 2 Tomatoes chopped
- 1 tsp Garam Masala
- 1 tsp Chili Powder red
Other Ingredients
- ½ cup Cream fresh
- 3 Tbsp Butter
- 1 Tbsp Oil
- 2 tsp Salt or to taste
- 2 pinches Fenugreek Leaf crushed, dried
Instructions
- Soak the split black gram (urad dal) and kidney beans (rajma) in 3-4 cups of water overnight. This allows the lentils to soften and cook evenly.
- In a large pot or pressure cooker, combine the soaked lentils and beans with the same soaking water. Add salt, red chili powder, and half of the chopped ginger. Cook until the lentils and beans are tender and easily mashed.
- While the lentils are cooking, finely chop the onion, remaining ginger, garlic, and tomatoes.
- In a heavy-bottomed pan or Dutch oven, heat the oil and butter over medium heat. Add the cumin seeds and let them sizzle for a few seconds to release their aroma.
- Add the chopped onions and sauté until golden brown. This builds a flavorful base for the dal.
- Add the chopped ginger, garlic, and tomatoes to the pan. Sauté until the tomatoes soften and break down, creating a rich masala.
- Add the cooked lentils and beans to the pan, initially without the cooking liquid. Using the back of a ladle or a potato masher, gently mash some of the lentils and beans to create a creamy texture.
- Gradually add the cooking liquid from the lentils and beans to the pan, along with additional water if needed to achieve your desired consistency. Simmer over low heat for 15 minutes, allowing the flavors to meld.
- Stir in the fresh cream and garam masala. Simmer for another 5 minutes to enhance the richness and creaminess of the dal.
- Just before serving, sprinkle with crushed kasoori methi (dried fenugreek leaves) for a final touch of aromatic complexity. Serve hot with naan, paratha, or rice.

- Replacing the tomatoes with 4 tablespoons of thick tomato paste will enhance the taste and color of the dish.
