Instructions

Preparation

  • Wash and soak the black lentils and kidney beans in ample water overnight. Drain and pressure cook until very soft (about 4-5 whistles).

Sautéing Aromatics

  • Heat ghee in a heavy-bottomed pot or Dutch oven over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and green chilies, sautéing until onions turn translucent.

Building the Flavor

  • Stir in the ginger-garlic paste and fry for 3-4 minutes. Add the chopped tomatoes and cook on low heat for 4-5 minutes, until softened. Add turmeric powder, red chili powder, and salt, mixing well.

Combining and Simmering

  • Add the pressure-cooked lentils and kidney beans to the pot. Pour in 1/4 cup of water, ensuring all ingredients are well combined. Cover and cook for 3-4 minutes to allow the flavors to meld.

Creamy Finish

  • Stir in the butter until melted and incorporated. Add garam masala and malai (cream), mixing gently. Cook for another minute, then remove from heat.

Serving

  • Transfer the Dal Makhani to a serving bowl. Garnish with fresh coriander leaves. Serve hot with naan, roti, or rice.

Recipe Notes

Expert Tips for the Perfect Dal Makhani

  • Soaking is Key: Soaking the lentils and beans overnight is crucial for achieving a creamy texture. This softens them significantly, resulting in a smoother, more flavorful dal.
  • Low and Slow: Simmering the dal on low heat allows the flavors to develop fully and creates a rich, creamy consistency. Avoid high heat, which can burn the spices and make the dal dry.
  • Ghee or Oil: While ghee adds a richer flavor, you can substitute with vegetable oil if desired. Adjust the amount according to your preference.
  • Fresh Spices: Using freshly ground spices whenever possible will significantly enhance the overall flavor profile of your Dal Makhani. It's worth taking the extra step!
