Ingredients
 

Chana Dal Preparation

  • 1 cup Split Chickpea split chickpeas, soaked in water for at least 2 hours

  • 1 Tomato finely chopped, medium-sized
  • 1.5 tsp Salt or to taste
  • 1-1.5 cup Water adjust for desired consistency

Instructions
 

Prepare the Chana Dal

  • Soak the chana dal in water for at least 2 hours.
  • Drain and rinse the chana dal thoroughly.
  • Cook the chana dal in a pot or pressure cooker until approximately 80% cooked (or until soft but not mushy).
  • Allow the chana dal to cool slightly.

Sauté Aromatics

  • Heat the oil in a pan or wok over medium heat.
  • Add the mustard seeds and cumin seeds; allow them to splutter.
  • Add the curry leaves and sauté for a few seconds until fragrant.
  • Add the minced garlic and sauté for about 2 minutes until lightly browned.

Build the Flavor

  • Add the ginger-garlic paste and sauté for another minute.
  • Stir in the turmeric powder and red chili powder, and sauté for 30 seconds.
  • Add the chopped tomatoes and cook until softened, about 2-3 minutes.

Blend and Simmer

  • Once cooled slightly, transfer the cooked chana dal to a blender and blend into a smooth paste. Do not add water while blending unless absolutely necessary.
  • Return the chana dal paste to the pan with the sautéed mixture.
  • Add salt to taste.
  • Add 1 to 1 1/2 cups of water, mixing well to achieve your preferred consistency. The aamti should be relatively thick, not watery.
  • Simmer the aamti over low heat for about 5 minutes, stirring occasionally, to allow the flavors to meld together.

Serve and Enjoy

  • Serve hot with steamed rice, roti, or puran poli.
