Ingredients
Chana Dal Preparation
- 1 cup Split Chickpea split chickpeas, soaked in water for at least 2 hours
Aromatics & Spices
- 1 tbsp Oil vegetable or coconut oil
- 1 tsp Mustard Seeds also known as rai
- 1 tsp Cumin Seeds also known as jeera
- 5-7 leaves Curry Leaves
- 5 clove Garlic minced or finely chopped
- 1 tsp Turmeric Powder also known as haldi
- 1 tsp Chili Powder adjust to taste, red
- 1 tbsp Ginger-Garlic Paste or use freshly grated ginger and minced garlic
Instructions
Prepare the Chana Dal
- Soak the chana dal in water for at least 2 hours.
- Drain and rinse the chana dal thoroughly.
- Cook the chana dal in a pot or pressure cooker until approximately 80% cooked (or until soft but not mushy).
- Allow the chana dal to cool slightly.
Sauté Aromatics
- Heat the oil in a pan or wok over medium heat.
- Add the mustard seeds and cumin seeds; allow them to splutter.
- Add the curry leaves and sauté for a few seconds until fragrant.
- Add the minced garlic and sauté for about 2 minutes until lightly browned.
Build the Flavor
- Add the ginger-garlic paste and sauté for another minute.
- Stir in the turmeric powder and red chili powder, and sauté for 30 seconds.
- Add the chopped tomatoes and cook until softened, about 2-3 minutes.
Blend and Simmer
- Once cooled slightly, transfer the cooked chana dal to a blender and blend into a smooth paste. Do not add water while blending unless absolutely necessary.
- Return the chana dal paste to the pan with the sautéed mixture.
- Add salt to taste.
- Add 1 to 1 1/2 cups of water, mixing well to achieve your preferred consistency. The aamti should be relatively thick, not watery.
- Simmer the aamti over low heat for about 5 minutes, stirring occasionally, to allow the flavors to meld together.
Serve and Enjoy
- Serve hot with steamed rice, roti, or puran poli.
