Ingredients

- 1 head Garlic peeled and roughly chopped
- 2 cup Yogurt full-fat yogurt or curd, plain
- 4-5 Chili Pepper chopped (adjust to taste), green
- 10-12 Curry Leaves fresh
- 2 tbsp Gram Flour besan, or chickpea flour, roasted
For the Tempering
- 1 tsp Mustard Seeds rai
- 1 tsp Oil vegetable or coconut oil
- 1/2 tsp Salt or to taste
Instructions
Prepare the Chutney
- Combine the garlic, yogurt, green chilies, curry leaves, roasted gram flour, and salt in a blender or food processor.
- Blend until you achieve a smooth, creamy paste. Adjust the consistency by adding a little water if needed.
Make the Tempering
- Heat the oil in a small pan over medium heat.
- Once hot, add the mustard seeds and let them splutter.
- Add the curry leaves and sauté for a few seconds until fragrant.
Combine and Serve
- Pour the hot tempering over the chutney paste.
- Mix well to combine.
- Taste and adjust seasoning as needed.
