  • Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.

  • Punch down the dough to release the air. Divide it into 4 equal pieces and shape each into a smooth ball. Let rest for 15 minutes.

  • Grease a 9x5 inch loaf pan. Roll each dough ball into an oval and arrange them seam-down in the prepared pan.

  • Cover and let rise for a second time for 45 minutes, or until doubled in size.

  • Preheat oven to 345°F (175°C). If desired, whisk together the egg yolk and milk for the egg wash and brush it over the risen dough. This creates a beautiful golden crust.
