- 1 cup Mandarin Oranges peeled segments
- 1/2 Onion red, thinly sliced
- 1 Carrot thinly sliced or julienned
- 1/4 cup Walnuts roasted and cooled, roughly chopped
Citrus Vinaigrette
- 4 tbsp Olive Oil
- 2 tbsp Lemon Juice freshly squeezed
- 1 tsp Honey
- 1 tbsp Lemon Zest finely grated lemon peel
- 1/2 tsp Pepper black, freshly ground
- 1/2 tbsp Pepper Flakes or to taste, red
- 1/2 - 1 tsp Salt or to taste
