Ingredients
- 1 cup Eyed Beans black, lobiya
- 2 large Tomatoes
- 1 pinch Asafoetida
- 1 tbsp Oil
- 1/4 tsp Cumin Seed
- 1/2 tsp Chili Powder
- 1 tsp Salt
- 1 tsp Lemon Juice
- 1 tsp Coriander finely chopped
- 1 Chilli finely chopped, green
- 2 tsp Jaggery brown sugar
Instructions
Prepare the Black Eyed Beans
- Soak 1 cup of dried black eyed beans in water for at least 2 hours, or preferably overnight.
- Pressure cook the soaked beans with enough water for 3 whistles on high heat. Ensure the beans are tender but not mushy.
Sauté Aromatics
- Heat 1 tablespoon of oil in a pot or pan over medium heat. Add 1/4 teaspoon of asafoetida and 1 teaspoon of cumin seeds.
- Once the spices begin to crackle, add 1 finely chopped green chili and 2 chopped tomatoes. Add a little water to prevent burning and sauté until softened.
Simmer the Curry
- Add 1/2 teaspoon of chili powder and salt to taste. Cook for a few minutes until the tomatoes soften and the color changes slightly.
- Stir in the pressure-cooked black eyed beans and 2 teaspoons of jaggery (or brown sugar).
- Add a little water to achieve your desired consistency and simmer for about 10 minutes, allowing the flavors to meld.
Finishing Touches
- Remove from heat and stir in 1 tablespoon of lemon juice. Mix well to combine.
- Garnish with 1 tablespoon of finely chopped coriander.
- Serve hot with rice, yogurt, and chapatis.
