  • 1 medium Tomato finely chopped
  • 1 medium Cucumber finely chopped
  • 2 Chili adjust to taste, finely chopped, green
  • 1/2 cup Coriander finely chopped, plus extra for garnish

Prepare the Black-Eyed Peas

  • Wash and soak the black-eyed peas in water for at least 3-4 hours, or preferably overnight. Pressure cook the peas with 1/2 tsp salt for about 10 minutes, or until tender. Drain well, reserving the cooking liquid if desired (use it for soups or to make flatbreads).

Chop the Vegetables

  • While the peas are cooking, finely chop the onion, tomato, cucumber, green chilies, and coriander leaves.

Assemble the Chaat

  • In a large bowl, combine the cooked and drained black-eyed peas with the chopped vegetables, tamarind chutney, mint-coriander chutney, lemon juice, chaat masala, and salt. Gently mix everything together.
