Ingredients
- 500 gm Okra
- 2 Onion chopped, medium sized
- 1 tbsp Ginger Paste
- 1/4 tsp Chilli Paste hari mirch, green
- 1 tbsp Garlic Paste
- 1/2 tsp Salt or as per taste
- 1/4 Chillies pwr, red
- 1/4 tsp Degi Mirch
- 1/2 tsp Kitchen King Masala
- 1/4 tsp Mango dry pwr
- 1/2 tsp Turmeric Powder haldi, pwr
- 1/2 tsp Coriander dhania, coriender pwr
- 1/2 tsp Cumin Seed jeera, pwr
- 1/4 tsp Asafoetida hing
- 3 tbsp Flour garam
- 1/4 cup Oil
Instructions
- Combine all the spices, besan, ginger, garlic, green chilly paste, 2 tbsp oil in a bowl and mix well.
- Wash, wipe dry and trim both the ends of the bhindi. Slit each bhindi vertically without breaking or cutting into two halves.
- Fill each bhindi with the besan mixture.
- In a pan, put oil and grated onion. Saute it for 5 min. Add pinch of salt, stuffed bhindi and saute for 2-3 min. Now, cover with lid and cook on low heat till done.
- Serve bharwan bhindi hot with chapaties.
Recipe Notes
You can prepare stuffing in advance and store it in airtight container in refrigerator for 2-3 days.
Additional Tips
- For perfectly crisp bhindi, thoroughly pat the okra dry with a kitchen towel before stuffing and cooking—any moisture can make the dish slimy.
- If you prefer a tangier flavor, add a pinch of amchur (dry mango powder) or a squeeze of lemon juice to the stuffing mixture for a subtle, zesty kick.
- To make this dish vegan-friendly, ensure you use oil instead of ghee and double-check that your spice blends (like garam masala) contain no dairy derivatives.
- Leftover Bharwan Bhindi Masala can be stored in an airtight container in the refrigerator for up to 2 days; reheat in a pan to maintain its texture, avoiding the microwave which may make the okra soggy.
