  • Wash the pui shaak thoroughly. Chop the leaves and stems.

  • Marinate the prawns with turmeric powder, salt, and lemon juice. This enhances their flavor and helps them retain moisture when cooking.
  • Shallow fry the marinated prawns in mustard oil until they turn pink and opaque. Set aside.

  • In the same pan, add dried red chilies and panch phoron. Sauté for a few seconds until fragrant. This releases the aromatic oils from the spices.
  • Add chopped garlic, onion, and ginger to the pan. Sauté until the onions are translucent and softened.
  • Add chopped tomatoes, cumin powder, turmeric powder, red chili powder, and salt. Stir well to combine.
  • Add the mixed vegetables and pui shaak to the pan. Stir gently to coat the greens in the spice mixture.
  • Cover the pan and cook for 10 minutes, or until the vegetables and pui shaak are tender.
  • Remove the lid and add the fried prawns to the pan. Gently stir to combine.
  • Garnish with kasundi for a tangy kick. Serve hot with steamed rice.
