  • Wash and scrub the outer skins of the Sweet potatoes with a rough kitchen cloth.
  • Cut each sweet potato into two halves along the length. Rub a little oil all over them.
  • Pre-heat an oven to 200 Degrees C. Place the sweet potatoes on a baking tray and sprinkle some salt over them. Bake for about 15-18 mins.
  • Remove from the oven and scoop out some of the flesh from the middle of the sweet potatoes.
  • Take the crumbled Tofu, chopped peppers, chopped spring onions, red chili sauce, soy sauce, salt and paprika in a mixing bowl. Mix together. One can also add some of the scooped out sweet potato flesh to this mixture.
  • Spoon this mixture into the hollows of the sweet potatoes.
  • Put them back in the oven and bake for another 10 mins.
  • Remove from oven and enjoy !!
