Ingredients
Dry Ingredients
- 1/4 cup Wheat Flour whole
- 1/4 cup Gram Flour besan
- 3/4 cup Rolled Oats finely powdered
- 1 tsp Chili Powder red
- 1 tsp Coriander Powder dhania
- 1/4 tsp Turmeric Powder haldi
- 1/2 tsp Cumin jeera, seeds
- 1 tsp Asafoetida hing
Wet Ingredients
Tempering Ingredients
- 2 tsp Oil
- 1 tsp Mustard Seeds rai
- 2 tsp Sesame Seeds
- 2 Chilies broken into small pieces, dry red chilies, red
- Few Curry Leaves
Instructions
Prepare the Muthia Dough
- Mix all dry ingredients together in a large bowl. Add the grated carrot, amla, coriander, yogurt, and ginger. Gradually add water, mixing until a soft, pliable dough forms. The dough should not be sticky.
Check Seasoning
- Taste the dough and adjust salt and spices as needed.
Preheat and Prepare
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Shape and Bake
- Lightly oil your hands. Roll the dough into small balls (approximately 1 inch in diameter). Flatten each ball slightly on the prepared baking sheet.
- Bake for 10 minutes.
Flip and Bake Again
- Carefully flip the muthias. Bake for another 10 minutes, or until golden brown and cooked through.
Make the Tempering
- While the muthias are baking, heat oil in a small pan. Add mustard seeds; once they splutter, add red chilies and curry leaves. Sauté briefly until fragrant. Stir in sesame seeds and asafoetida.
Serve
- Remove the baked muthias from the oven and transfer them to a serving plate. Pour the tempering over the muthias. Serve hot, optionally with mint chutney.
