  • 1 cup Carrot grated, tightly packed
  • 1 tbsp Amla grated, indian gooseberry
  • 3 tbsp Coriander dhania, finely chopped
  • 2 tbsp Yogurt curd
  • 1 tsp Ginger fresh, grated
  • 1/2 cup Water add as needed to achieve desired dough consistency
  • 1/2 tsp Salt to taste

Prepare the Muthia Dough

  • Mix all dry ingredients together in a large bowl. Add the grated carrot, amla, coriander, yogurt, and ginger. Gradually add water, mixing until a soft, pliable dough forms. The dough should not be sticky.

Check Seasoning

  • Taste the dough and adjust salt and spices as needed.

Preheat and Prepare

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Shape and Bake

  • Lightly oil your hands. Roll the dough into small balls (approximately 1 inch in diameter). Flatten each ball slightly on the prepared baking sheet.
  • Bake for 10 minutes.

Flip and Bake Again

  • Carefully flip the muthias. Bake for another 10 minutes, or until golden brown and cooked through.

Make the Tempering

  • While the muthias are baking, heat oil in a small pan. Add mustard seeds; once they splutter, add red chilies and curry leaves. Sauté briefly until fragrant. Stir in sesame seeds and asafoetida.

Serve

  • Remove the baked muthias from the oven and transfer them to a serving plate. Pour the tempering over the muthias. Serve hot, optionally with mint chutney.
