Baked Arancini balls are quick to make and yummy to taste!

Ingredients
  

  • 1 1/2 rice leftover
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 cup vegetables leftover like peas, carrot, broccoli
  • Small block mozzarella
  • 1-2 teaspoon oil
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Take the left over rice and mix the egg and veggies in it.
  • Add the seasoning and mix well.
  • Cut the cheese in small square blocks
  • Take the mixture of rice, veggies and egg and roll into a ball.
  • Put 1 square of cheese into middle of each ball and flatten it a bit.
  • Dip this ball in breadcrumbs and refrigerate for 15 minutes
  • Take a baking tray and brush it with oil. Then arrange the Arancinis in a baking dish and bake at 200 deg for 15 minutes.
  • Then turn and bake for another 15 minutes until they are golden brown.
  • Serve hot with ketchup
