Ingredients
- 1 1/2 rice (leftover )
- 1 Eggs
- 1/2 cup breadcrumbs
- 1/2 cup vegetables (leftover like peas, carrot, broccoli)
- Small block mozzarella
- 1-2 tsp oil
- Salt (to taste)
- Pepper (to taste)

Instructions
- Take the left over rice and mix the egg and veggies in it.
- Add the seasoning and mix well.
- Cut the cheese in small square blocks
- Take the mixture of rice, veggies and egg and roll into a ball.
- Put 1 square of cheese into middle of each ball and flatten it a bit.
- Dip this ball in breadcrumbs and refrigerate for 15 minutes
- Take a baking tray and brush it with oil. Then arrange the Arancinis in a baking dish and bake at 200 deg for 15 minutes.
- Then turn and bake for another 15 minutes until they are golden brown.
- Serve hot with ketchup
