Ingredients
Rice & Liquids
- 1 cup Basmati Rice
- 1 3/4 cup Water adjust as needed for desired rice consistency
Spices & Aromatics
- 1 medium Onion thinly sliced
- 6 Cardamom Pods green, lightly crushed
- 1 stick Cinnamon Stick
- 3 Cloves
- 1 Bay Leaf
- 1 handful Curry Leaves
- 1/2 tsp Salt or to taste
Instructions
Prepare the Rice
- Wash the basmati rice thoroughly and soak in cold water for 15-20 minutes. Drain well.
Fry the Nuts and Raisins
- Heat 4 tablespoons of ghee in a heavy-bottomed pan or pot over medium heat. Add the cashews and fry until golden brown. Remove from the pan and set aside. Add the raisins to the pan and fry until they plump up. Remove and set aside.
Caramelize the Onions
- Add the sliced onions to the pan and sauté in the remaining ghee until they are nicely caramelized, about 5-10 minutes. Remove and set aside.
Sauté the Spices
- Add the cardamom, cloves, cinnamon, curry leaves, and bay leaf to the pan. Sauté briefly until fragrant, about 30 seconds to 1 minute.
Cook the Rice
- Add the drained rice and salt to the pan. Stir well to combine. Sauté for 2-3 minutes until lightly toasted. Add the water and bring to a boil. Reduce heat to low, cover, and simmer for about 15-18 minutes, or until the rice is cooked through and the water is absorbed.
Finish and Serve
- Once the rice is cooked, gently fluff it with a fork. Stir in the remaining 2 tablespoons of ghee, the caramelized onions, fried cashews, and raisins. Garnish with extra cashews and raisins, if desired. Serve hot and enjoy!
