Prepare the Besan Gatte

  • Combine gram flour, yogurt, baking soda, fennel seeds, ajwain, turmeric powder, red chili powder, asafoetida, and salt in a bowl.
  • Gradually add water while kneading until a stiff, yet pliable dough forms. Be careful not to add too much water at once.
  • Divide the dough into several equal portions. Roll each portion into a cylindrical shape (about 1-inch thick).
  • Bring 3-4 cups of water to a boil in a large pot. Gently add the rolled gatte and boil for 15-20 minutes, or until they float to the surface and are cooked through.
  • Remove the cooked gatte and allow them to cool completely. Once cooled, slice them into bite-sized pieces. Reserve the boiling water in which the gatte were cooked.

Make the Curry Gravy

  • Finely chop the onion, tomato, garlic, ginger, and green chili.
  • Heat vegetable oil in a pan or pot. Add the chopped onions and saute until translucent.
  • Add the chopped tomatoes, garlic, ginger, and green chili. Cook for 2-3 minutes.
  • Stir in the coriander powder, red chili powder, garam masala, and salt. Cook for another minute, stirring continuously.
  • Reduce the heat to low. Add the plain yogurt and whisk well, ensuring there are no lumps. Cook until the oil starts to separate from the gravy. This usually takes 2-3 minutes.
  • Pour in the reserved water from boiling the gatte. Add the sliced gatte pieces to the gravy. Simmer on low heat for 5-7 minutes, allowing the flavors to meld.

Serve and Garnish

  • Transfer the Besan Gatte ki Curry to a serving bowl. Garnish generously with fresh coriander leaves.
  • Serve hot with parathas, rotis, or naan.
