Prepare the Gatte

  • Combine gram flour, salt, red chili powder, and baking soda. Gradually add water, mixing to form a slightly stiff dough. Roll the dough into thick cylindrical logs and cut into 1-inch pieces.

Boil the Gatte

  • Bring a large pot of water to a boil. Gently add the gatte pieces and cook until they float to the surface, indicating they are cooked through. Remove the gatte and set aside, reserving the cooking water.

Make the Gravy

  • In a pan or kadai, heat oil. Add cumin seeds and asafoetida; let them splutter.
  • Add grated ginger, coriander powder, turmeric powder, and salt. Sauté for a minute until fragrant.
  • Pour in about 1 cup of the reserved gatte cooking water. Simmer for a few minutes.
  • Stir in half of the beaten yogurt and cook for another 2-3 minutes, until the gravy slightly thickens.
  • Add the cooked gatte to the gravy. Simmer gently for 5 minutes to allow the gatte to absorb the flavors.
  • Stir in the remaining yogurt and cook for a couple more minutes until heated through. Do not boil.
  • Garnish with fresh coriander leaves.
  • Serve hot with rice or roti.
