Ingredients
Rice & Fenugreek
- 2 cup Basmati Rice rinse thoroughly before cooking. other long-grain rice can be substituted.
- 1 tbsp Fenugreek Seeds also known as methi dana. lightly toast for enhanced aroma (optional).
Aromatics & Spices
- 1 medium Onion finely sliced
- 2 Chilies finely chopped; adjust quantity to your spice preference., green
- 1 tsp Peppercorns whole peppercorns, black, lightly crushed.
- 1 tsp Pepper ground black pepper, black
- 1.5 tsp Salt adjust to taste.
Fats & Liquids
- 1 tbsp Ghee clarified butter; can substitute with vegetable oil.
- 4 cup Buttermilk also known as chach. use fresh, full-fat buttermilk for best results.
Instructions
Preparation
- Wash and soak the basmati rice in cold water for at least 20 minutes. Soak the fenugreek seeds in warm water for 10 minutes.
Sauté Aromatics
- Heat the desi ghee in a pot or pan over medium heat. Add the fenugreek seeds and sauté until they begin to pop and release their aroma.
Add Vegetables and Spices
- Add the sliced onions and chopped green chilies. Sauté until the onions soften and become translucent, about 3-5 minutes.
Cook the Rice
- Add the soaked rice, whole and ground black pepper, and salt to the pot. Stir well to combine. Pour in the buttermilk. Bring the mixture to a boil.
Simmer and Serve
- Reduce heat to low, cover the pot tightly, and simmer for approximately 15-20 minutes, or until the buttermilk is completely absorbed and the rice is cooked through. Fluff with a fork and serve hot.
