This slurry will help thicken the kulfi later. Steep the saffron threads in 2 teaspoons of warm milk for 15-20 minutes to release their color and aroma.

  • In a wide, heavy-bottomed pan or non-stick pot, bring the remaining 2 1/4 cups of milk to a rolling boil over high heat. This slow simmering process concentrates the milk's flavor and creates a creamy base for the kulfi. This should take approximately 20-25 minutes.

  • Remove the pan from the heat and let the kulfi base cool completely to room temperature. This prevents ice crystals from forming during freezing.
