Ingredients
- 1 Full Cream or milk litter milk
- 2 tbsp Lemon Juice
- 1 tbsp Sugar powdered
- 10 strands Saffron Strands nos
- 1 tsp Cardamom Powder elaichi
- Pistachios for garnish
Instructions
Prepare the Chenna
- Soak saffron strands in 2 tablespoons of warm milk and set aside.
- Boil 1 liter of whole milk over medium heat until it comes to a gentle simmer.
- Reduce heat to low, add lemon juice slowly while stirring continuously until the milk curdles.
- Strain the curdled milk through a fine-mesh sieve lined with cheesecloth. Rinse the collected chenna (curds) under cold water until the water runs clear.
- Gather the cheesecloth, squeeze out excess water gently, and set aside.
Knead and Mix
- Place the chenna on a clean surface and knead it thoroughly with the heel of your palm for about 10 minutes until it becomes smooth and elastic.
- Incorporate the saffron-infused milk, powdered sugar, and cardamom powder. Mix everything thoroughly and continue kneading for another 5 minutes.
Shape and Cook
- Cook the mixture in a non-stick pan over medium heat for 5-6 minutes, stirring constantly, until it slightly thickens and holds its shape.
- Remove from the heat and let the mixture cool slightly.
- Divide the mixture into 12 equal portions.
- Shape each portion into small, round balls or a preferred shape.
Garnish and Serve
- Make a small indentation on top of each sondesh and place a piece of chopped pistachio in the center.
- Refrigerate for at least 30 minutes to allow the flavors to meld and the sondesh to firm up.
- Serve chilled and enjoy!
