Instructions

Prepare the Carrots

  • Wash, peel, and grate the carrots using a hand grater or food processor.

Cook the Carrots

  • Heat the ghee in a thick-bottomed pan or kadai over medium heat. Add the grated carrots and sauté for 10-15 minutes, stirring frequently, until they soften and lose their rawness.

Add Milk and Sugar

  • Pour in the milk (or khoya/mawa) and cook for another 10-15 minutes, stirring occasionally, until the mixture thickens slightly. Stir in the sugar and cook for 10 minutes more, or until the sugar dissolves completely.

Fry the Nuts and Raisins

Recipe Notes

Expert Tips for the Perfect Carrot Halwa

  • For a richer flavor, use khoya or mawa instead of, or in addition to, milk.
  • Don't rush the cooking process; allow the carrots to cook slowly to achieve a smooth, melt-in-your-mouth texture.
  • Adjust the amount of sugar according to your preference and the sweetness of the carrots.
  • For a visually appealing halwa, use a combination of orange and red carrots for a vibrant color.
