Ingredients
For the Halwa
- 500g grams Carrot fresh carrots; orange or red varieties work well
- 150g grams Sugar granulated
- 200ml milliliters Milk alternatively, use 100g khoya (reduced milk solids) or mawa for a richer flavor. khoya/mawa can be substituted for some or all of the milk.
- 100g grams Clarified Butter
For Garnishing
- 50g grams Cashew whole or slivered
- 25g grams Raisin
- 10g grams Almond slivered or chopped
- 1 tsp tsp Cardamom Powder also known as elaichi powder; adds warmth and aroma
Instructions
Prepare the Carrots
- Wash, peel, and grate the carrots using a hand grater or food processor.
Cook the Carrots
- Heat the ghee in a thick-bottomed pan or kadai over medium heat. Add the grated carrots and sauté for 10-15 minutes, stirring frequently, until they soften and lose their rawness.
Add Milk and Sugar
- Pour in the milk (or khoya/mawa) and cook for another 10-15 minutes, stirring occasionally, until the mixture thickens slightly. Stir in the sugar and cook for 10 minutes more, or until the sugar dissolves completely.
Fry the Nuts and Raisins
- In a separate small pan, heat a little ghee and fry the cashews, raisins, and almonds until golden brown. Set aside.
Finish the Halwa
- Stir in the cardamom powder and mix well. Add the fried nuts and raisins, combining gently.
Serve
- Serve the carrot halwa warm or at room temperature. Garnish with extra nuts if desired.
