I'm thrilled to finally share this recipe for Gavthi Chicken Rassa, a classic Maharashtrian country-style chicken curry. Until recently, this beloved dish had eluded my kitchen, but this version is incredibly close to the authentic flavors found in roadside dhabas. Get ready for a culinary adventure!This recipe comes from a friend whose mother prepares it for a restaurant, making it incredibly authentic and flavourful. It's the perfect accompaniment to chapati or rice. If you're from Maharashtra, this might be a familiar dish. But even if you're not, give it a try; every bite will speak for itself!While this recipe uses slightly less oil than some traditional versions, the rich smoky flavors remain. Feel free to adjust the oil quantity to your preference.

Ingredients
Chicken & Marinade
- 1 kg Chicken with bones; country chicken recommended for best flavor
- 2 tsp Salt to taste
- 1 tsp Turmeric Powder
Dry Roasted & Blended Paste
- 1 tbsp Sesame Seeds roasted
- 1 tbsp Cumin Seeds roasted
- 2 tbsp Desiccated Coconut
Aromatics & Spices
- 1 cup Coriander with stems
- 2 tbsp Garlic roughly chopped
- 2 tbsp Ginger roughly chopped
- 4-5 Chilies chopped, green
- 2 Onions charred on gas stove or chulha (essential for smoky flavor), skin removed, then blended (do not wash before blending)
- 3 tsp Chili Powder red
- 1 tbsp Garam Masala powder
- 1 large Onion finely chopped
- 1 Cinnamon Stick small
- 2 Cardamom Pods
- 3 Cloves
- 3 tbsp Oil for cooking
- 2 cup Water or as needed
Instructions
Marinate the Chicken
- Marinate the chicken with salt and turmeric powder. Set aside for 30 minutes. Turmeric acts as a natural antiseptic.
Prepare the Spice Paste
- Dry roast the sesame seeds, cumin seeds, and desiccated coconut separately until fragrant. Grind them together in a blender to a smooth paste, adding a little water as needed.
Sauté Aromatics
- Heat oil in a pan or pot. Add the finely chopped onion, cinnamon stick, cardamom pods, and cloves. Cook until the onion turns golden pink.
Add Chicken & Water
- Add the marinated chicken and cook for 1-2 minutes. Add 1 cup of water, cover, and cook for 5 minutes, or until the water begins to boil.
Incorporate Spice Paste
- Add the prepared spice paste, red chili powder, and garam masala. Stir well. Add another cup of water (or more, as needed) to adjust the consistency.
Simmer & Serve
- Cover the pot and simmer until the chicken is cooked through and the sauce has reached your desired consistency. The chicken should be tender and the sauce should coat it nicely.
Garnish & Enjoy
- Serve hot with chapati or rice.
