  • Heat the sesame oil in a frying pan over medium heat. Add the sliced potatoes and fry until golden brown and slightly crispy. Remove from the pan and set aside.
  • In the same pan, sauté the chopped onions and garlic until softened and fragrant. This builds a flavorful base for the dish.
  • Add the cooked noodles to the pan and toss gently to combine with the onion and garlic mixture. This helps the noodles absorb the aromatic flavors.
  • Remove the pan from the heat. To serve, arrange the noodles in bowls.
  • Top with the grated papaya, fried potatoes, sliced eggs, ngapi (fish paste), chili flakes, tamarind paste, and sliced onions. The combination of flavors and textures makes this dish a true delight.

Recipe Notes

Good To Know

  • Add salt cautiously, as ngapi (fermented fish paste) is already salty.
  • Rinse the noodles in cold water after boiling to prevent clumping and maintain a chewy texture.
  • For a vegan version, omit fish sauce and animal-based toppings, and use mushroom soy sauce for umami.

Expert Tips

  • For a spicier kick, add a pinch of chili flakes or a dash of your favorite hot sauce to the Latto.
  • Fresh herbs like cilantro, mint, and basil can brighten the flavors and add a refreshing element.
  • Balance the salty and tangy flavors with a squeeze of lime juice just before serving.

Storage Instructions

  • Store leftover Latto in an airtight container in the refrigerator for up to 2 days. The noodles may absorb some of the sauce, so add a splash of water or broth when reheating to loosen them up.
