  • Chop the onion, carrots, tomatoes, green chilies, and potatoes. Dice the potatoes into small cubes, and fry them until golden brown. Set aside.

Sauté Aromatics

  • Heat vegetable oil in a pan or pot over medium heat. Add the chopped onions and sauté until translucent.

Add Spices and Vegetables

  • Add the ginger-garlic paste and sauté for a minute. Stir in the chopped tomatoes and cook until softened. Add garam masala, turmeric powder, red chili powder, and salt. Sauté for another minute.

Incorporate Soya and Peas

  • Add the soya granules and green peas to the pan. Stir well to combine.

Create the Sauce

  • Stir in the roasted gram flour (chickpea flour) and cook for a minute. Gradually add coconut cream and water, stirring continuously to prevent lumps. Adjust the consistency of the gravy as per your preference. Bring to a simmer.

Cook the Noodles

  • Cook spaghetti according to package directions. Drain and set aside.

Combine and Serve

  • Add the cooked spaghetti to the sauce. Stir gently to coat the noodles evenly. Serve hot, garnished with fried potatoes, lemon juice, finely chopped mint and coriander leaves.
