Ingredients
Pasta
- 1 cup Pasta any short shape, or rotini, rigatoni, such as penne
Sauce Ingredients
- 1 medium Onion finely chopped
- 1 medium Bell Peppers any color, finely chopped; or substitute with 1/2 cup finely chopped red onion
- 2 cup Tomatoes chopped; or 1 (28 ounce) can crushed tomatoes, ripe
- 3 clove Garlic minced
- 2 tbsp Olive Oil
- 1 tsp Oregano dried
- 1/2 tsp Pepper Flakes or to taste, red
- 1 tsp Salt plus more to taste
- 1/4 tsp Pepper black, freshly ground, plus more for garnish
Garnish
- Parsley chopped, for garnish (optional), fresh
- Parmesan Cheese for garnish (optional), freshly, grated
Instructions
Prepare the Vegetables
- Roast the onion and bell pepper in 1 tablespoon of olive oil for 2 minutes. Transfer to a plate to cool.
- Roast the tomatoes for about 3 minutes, until slightly softened. Cool.
- Blend the roasted onion, bell pepper, and tomatoes into a smooth puree. Set aside.
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse with cold water; set aside.
Make the Sauce
- Heat the remaining 1 tablespoon of olive oil in a large pan over medium heat. Add the minced garlic and red pepper flakes; cook for 1 minute, or until fragrant.
- Add the onion and bell pepper and saute for 2-3 minutes until slightly softened.
- Pour in the tomato puree. Stir in the oregano, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened to your desired consistency. Taste and adjust seasonings as needed.
Combine and Serve
- Remove the sauce from the heat and add the cooked pasta. Toss to coat evenly.
- Serve hot, garnished with fresh parsley and Parmesan cheese (if desired).
