Ingredients
 

For the Chenna (Indian Cheese)

  • 1 ltr Milk
  • ½ cup Yogurt lemon juice or vinegar can be substituted, but yogurt yields the best flavor and aroma.
  • 1 ltr Ice Water

For the Sugar Syrup

  • 1 cup Sugar increase to 1¼ cups for a sweeter syrup.
  • 2 cups Water ensure enough space for the rasgullas to expand in the pot.
  • ¼ tsp Cardamom ground
  • ½ tsp Rose Water optional
  • pinch Saffron Strands optional, for garnish

Instructions
 

  • In a large pot, bring the milk to a rolling boil. Once boiling, reduce the heat to low and slowly add the yogurt while stirring continuously. This gentle addition prevents the milk from splitting too quickly.
  • Remove the pot from the heat and let it sit for 2 minutes. The milk should curdle completely. If it doesn't, add a little more yogurt while the milk is still hot.
  • Pour the ice water into the curdled milk. This stops the cooking process and helps firm up the chenna. Let it sit for 2-3 minutes.
  • Line a colander with a cheesecloth or muslin cloth. Pour the curdled milk mixture through the cloth to separate the chenna (cheese solids) from the whey (liquid). Rinse the chenna under cold running water to remove any residual yogurt taste.
  • Gather the edges of the cloth and tie it securely. Hang the chenna for 45 minutes to drain excess whey. The chenna should be firm and slightly crumbly.
  • In a wide, heavy-bottomed pot, combine the sugar and water. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
  • Place the chenna on a clean, smooth surface. Knead it gently for 8-10 minutes until it becomes smooth and pliable. This step is crucial for achieving the soft, spongy texture of the rasgullas. Divide the chenna into small, equal portions. Roll each portion between your palms to form smooth, round balls about 1 inch in diameter.
  • Add the ground cardamom and rose water (if using) to the boiling sugar syrup. Gently slide the chenna balls into the syrup, ensuring they have enough space to expand. Cover the pot with a lid and cook for 10 minutes over medium heat.
  • Every 3 minutes, gently swirl the pot to ensure even cooking and prevent the rasgullas from sticking to the bottom. They should double in size and become light and spongy.

  • Once cooked, remove the rasgullas from the syrup and let them cool slightly. Garnish with saffron strands (if using) and serve warm or chilled.
