Ingredients
 

For the Vadi Batter

  • 500 gm Lentils black, split, urad dal; rinse thoroughly before soaking
  • 1 cup Coriander dhania, finely chopped
  • 1 thumb-sized piece Ginger finely grated
  • 1.5 tsp Salt adjust to taste; a higher amount is generally preferred
  • 1 tsp Pepper black powder
  • 0.5 tsp Asafoetida hing
  • 1 tsp Chili Flakes adjust to your spice preference, red
  • 2 tsp Cumin seeds, zeera
  • 4 cloves Cloves
  • 1 small stick Cinnamon
  • 3 pods Cardamom black
  • 1 kg Bottle Gourd lauki; finely grated; squeeze out excess water

  • 1/4 tsp Turmeric for color and flavor, powder

Instructions
 

Prepare the Urad Dal

  • Soak 500g of urad dal (split black lentils) in plenty of water for at least 2-3 hours. Rinse the lentils thoroughly before soaking. After soaking, grind the lentils into a coarse paste using a blender or food processor. Beat the paste vigorously until it becomes light and fluffy. To check if it's ready, drop a small amount of the paste into a bowl of water; if it floats, it's ready.

Combine the Ingredients

  • Grate 1kg of bottle gourd (lauki) and squeeze out as much excess water as possible. Add the grated bottle gourd to the urad dal paste. In a small pan, dry roast the cloves, cinnamon, and black cardamom until fragrant. Grind these spices into a fine powder. Add the spice powder, along with the cumin seeds powder, red chili flakes, black pepper powder, asafoetida, salt, and finely chopped coriander and grated ginger to the dal-bottle gourd mixture. Mix everything well.

Shape and Dry the Vadis

  • Lay a clean plastic sheet or parchment paper on a flat surface. Spoon small portions of the vadi batter onto the sheet, leaving space between each vadi.

Sun-Dry the Vadis

  • Place the sheet with the vadis in direct sunlight. Cover with a thin cloth to protect them from dust and insects. Allow the vadis to dry completely in the sun. This will take several hours, or even a full day depending on the weather. Make sure they're completely dry to prevent mold.

Storage

  • Once the vadis are completely dry and firm to the touch, carefully store them in an airtight container in a cool, dry place. They will last for several weeks.

Expert Tips for Perfect Masala Urad Dal Vadi

  • For extra flavor, consider adding a pinch of turmeric powder to the batter.
  • The consistency of the batter should be thick enough to hold its shape but not too stiff. Adjust the amount of grated bottle gourd as needed.
  • Sun-drying is crucial for the vadis' texture and shelf life. Ensure they are completely dry before storing.
  • If you don't have access to direct sunlight, you can use a dehydrator to dry the vadis at a low temperature (around 135°F or 57°C).
