  • Soak paneer cubes in 2 cups of lukewarm water for at least 15 minutes to soften. Cut into 1-inch cubes.

Make the Spice Paste

  • In a blender, combine one chopped onion, ginger, garlic, cinnamon stick, black peppercorns, sesame seeds, turmeric powder, Kashmiri red chili powder, and two chopped tomatoes. Blend until a smooth paste forms.

Cook the Kadhai Paneer

  • Heat 2 tablespoons of oil in a Kadhai (wok) or large pan over medium heat. Add the chopped onion and sauté until translucent.
  • Add the prepared spice paste and cook for 3-4 minutes, stirring frequently, until fragrant.
  • Stir in the remaining 2 tablespoons of oil, bell pepper, coriander powder, Kasuri Methi, and salt. Cook for another 2-3 minutes, until the bell peppers are tender-crisp.
  • Add the paneer cubes and gently stir to combine. Cook for 2-3 more minutes, allowing the paneer to heat through and the flavors to meld. Do not overcook.
