Ingredients
 

Vegetables

  • 1 cup Pea Skins freshly removed from about 2 cups of green peas, green
  • 1 cup Potato peeled and finely chopped
  • 1-2 Chili finely chopped, adjust to taste, green

Other Ingredients

  • 1-2 Chili lal mirch, whole. for added heat., dried, red
  • 1 tbsp Mustard Oil
  • 1.5 tsp Salt or to taste
  • 1/4 cup Coriander dhania, chopped, fresh

Instructions
 

Prepare the Pea Skins

  • Select fresh green peas and carefully remove the tender skins. Roughly chop the skins.

Sauté the Spices and Vegetables

  • Heat mustard oil in a pan over medium heat. Add onion seeds and whole red chilies. Sauté for a few seconds until fragrant.
  • Add the chopped pea skins, potatoes, green chilies, turmeric powder, cumin powder, coriander powder, and salt. Stir well to combine.

Simmer and Finish

  • Cover the pan and cook over low heat for 10-12 minutes, or until the potatoes are tender and the pea skins are cooked through. Stir occasionally to prevent sticking.
  • Garnish with fresh coriander leaves.

Serve

  • Serve hot as a flavorful side dish with steamed rice, chapati, or paratha.
