Ingredients
 

Spices & Seeds

Legumes

  • 2 tbsp Lentils also known as urad dal, black, urad dal split
  • 2 tbsp Pigeon Peas also known as split bengal gram, chana dal, split

Other Ingredients

  • 2/3 cup Curry Leaves fresh, washed and patted dry
  • 1.5 tsp Salt or to taste

Instructions
 

Preparing the Spices and Seeds

  • Heat a cast iron pan over medium-high heat.
  • Add the dry red chilies and cumin seeds. Roast, stirring frequently, until the cumin seeds begin to pop and the chilies are fragrant.
  • Add the black lentils and split pigeon peas. Continue roasting, stirring frequently, until the lentils are fragrant and lightly browned.
  • Add the flax seeds and roast for 1-2 minutes, or until they begin to pop.
  • Add the curry leaves. Reduce heat to low and roast until the leaves are crisp and slightly browned, stirring frequently to prevent burning.

Grinding and Storing

  • Remove the pan from the heat and let the mixture cool completely.
  • Transfer the cooled mixture to a spice grinder. Add salt and grind until finely ground, but still with a slightly grainy texture. Do not over-grind.
  • Store the powder in an airtight container at room temperature. Refrigeration is not necessary.
