Ingredients
Spices & Seeds
- 4 tbsp Flax Seeds also known as alsi
- 1 tsp Cumin Seeds
- 4 Byadgi Chilies dry, or any other dry red chili with less heat, red
Legumes
- 2 tbsp Lentils also known as urad dal, black, urad dal split
- 2 tbsp Pigeon Peas also known as split bengal gram, chana dal, split
Other Ingredients
- 2/3 cup Curry Leaves fresh, washed and patted dry
- 1.5 tsp Salt or to taste
Instructions
Preparing the Spices and Seeds
- Heat a cast iron pan over medium-high heat.
- Add the dry red chilies and cumin seeds. Roast, stirring frequently, until the cumin seeds begin to pop and the chilies are fragrant.
- Add the black lentils and split pigeon peas. Continue roasting, stirring frequently, until the lentils are fragrant and lightly browned.
- Add the flax seeds and roast for 1-2 minutes, or until they begin to pop.
- Add the curry leaves. Reduce heat to low and roast until the leaves are crisp and slightly browned, stirring frequently to prevent burning.
Grinding and Storing
- Remove the pan from the heat and let the mixture cool completely.
- Transfer the cooled mixture to a spice grinder. Add salt and grind until finely ground, but still with a slightly grainy texture. Do not over-grind.
- Store the powder in an airtight container at room temperature. Refrigeration is not necessary.
