Ingredients
Mangoes
- 500 gm Mangoes preferably alphonso or similar variety; about 2 medium mangoes, ripe
Sweetener & Spices
- 250 gm Jaggery finely grated or powdered
- 1/2 tsp Salt black, kala namak
- 1/2 tsp Chili Powder adjust to taste, red
- 3 Cloves
- 3 Peppercorns black
- 1 inch Cinnamon Stick
Other
- 1 tbsp Vegetable Oil
- 1/4 tsp Salt regular table salt; to taste
- 1/2 cup Water optional, to adjust consistency
Instructions
Preparation
- Wash and peel the mangoes. Grate the mangoes using a grater.
Spice Infusion
- Heat the vegetable oil in a heavy-bottomed pan over medium heat. Add the cloves, cinnamon stick, and black peppercorns. Sauté until fragrant, about 30 seconds. Be careful not to burn the spices.
Combining Ingredients
- Add the grated mangoes and jaggery to the pan. Stir well to combine. Add the red chili powder, black salt, and regular salt. Stir continuously.
Cooking the Murabba
- Reduce the heat to low. Continue to stir frequently, ensuring that the mixture doesn't stick to the bottom of the pan. Cook until the mixture thickens and the excess water evaporates, about 20-25 minutes. If the mixture seems too thick, add a little water at a time to reach desired consistency.
Cooling and Storage
- Remove from heat and let the Murabba cool completely. Once cooled, transfer to a sterilized jar and store in an airtight container in the refrigerator.
