Ingredients
 

Mango Preparation

  • 3 cup Mango Pulp use ripe, sweet mangoes. approximately 4-5 large mangoes should yield 3 cups of pulp.

Sweetener and Spices

  • 0.75 cup Sugar adjust to your desired sweetness level. granulated sugar is recommended.
  • 0.5 tsp Cardamom Powder ground cardamom adds warmth and aroma.

Other

  • 0.5 tsp Ghee for greasing the tray; optional, but enhances flavor and prevents sticking.
  • 1 Baking Sheet a flat, non-stick surface is essential for even drying.
  • 1 Sharp Knife for cutting and removing the dried aam papad.

Instructions
 

Prepare the Mango Mixture

  • Combine mango pulp, sugar, and cardamom powder in a heavy-bottomed saucepan.
  • Stir well to ensure the sugar is evenly distributed.

Cook the Mango Mixture

  • Place the saucepan over medium heat and bring the mixture to a boil, stirring continuously to prevent sticking and burning.
  • Reduce the heat to low and simmer for 5-8 minutes, or until the mixture thickens slightly and starts to pull away from the sides of the pan.

Prepare the Tray

  • Lightly grease a baking sheet or tray with ghee (clarified butter). This will prevent the Aam Papad from sticking.

Spread and Dry

  • Pour the cooked mango mixture onto the prepared tray and spread it evenly into a thin, uniform layer. The thinner the layer, the faster it will dry.
  • Place the tray in direct sunlight to dry completely. The drying time will depend on the intensity of the sunlight and the thickness of the layer. It can take anywhere from 4-8 hours.
  • Keep an eye on it and turn it occasionally to ensure even drying. Avoid any dust or debris settling on the candy.

Cut and Serve

  • Once completely dry, the Aam Papad will be firm and easily peelable from the tray. Use a sharp knife to cut the Aam Papad into desired shapes and sizes.
  • Store in an airtight container in a cool, dry place. It should last for several weeks.
