  • 2 Mangoes alphonso or similar variety recommended, ripe

Sweetening and Seasoning

  • 1/4 cup Sugar adjust to taste, granulated white sugar
  • 1/2 tsp Salt black, for a savory touch, kala namak

Prepare the Mango Pulp

  • Puree the ripe mangoes until completely smooth. Strain the pulp to remove any fibers for a smoother texture.

Combine Ingredients

  • In a non-stick saucepan, combine the mango puree, sugar, black salt, lemon juice (if using), and chili powder (if using).

Cook the Mixture

  • Cook the mixture over medium-low heat, stirring continuously, for about 10-15 minutes, or until the mixture thickens significantly and begins to pull away from the sides of the pan. The consistency should be similar to a very thick jam.

Dry the Aam Papad

  • Pour the cooked mixture onto a lightly oiled plate or parchment paper. Spread it evenly to about 1/4 inch thickness.

Sun-Drying or Fan-Drying

  • Leave the mixture to dry completely. This can be done in direct sunlight (best) for several hours, turning it occasionally, or using a low-speed fan for a longer drying period (approximately 12-24 hours). Ensure the Aam Papad is completely dry and firm to the touch before cutting.

Cut and Serve

  • Once completely dry, cut the Aam Papad into small squares or desired shapes. Store in an airtight container in a cool, dry place.
