Instructions

Prepare the Mango

  • Wash and peel the mango. Grate the mango flesh using a coarse grater.

Cook the Meetha Achar

  • In a heavy-bottomed pan, combine the grated mango, sugar, cloves, crushed black pepper, and black salt (if using). Stir well to combine.

Simmer and Thicken

  • Cook over low heat, stirring frequently, until the mixture thickens and most of the liquid evaporates. This will take about 15-20 minutes. Be careful not to burn the mixture.

Infuse with Saffron

  • In a small bowl, steep the saffron strands in 1-2 tablespoons of warm water for 10 minutes to release their color and flavor. Add the saffron water to the mango mixture.

Garnish and Cool

  • Remove from heat and stir in the chopped cashews and raisins. Let the mixture cool completely before transferring it to an airtight container.

Serve and Enjoy

  • Serve the Aam Ka Meetha Achar as a dessert or a unique accompaniment to savory dishes. Store in the refrigerator for up to a week.
