Mangoes

  • 1 kg Mangoes raw, ripe mangoes; ensure they are firm but not underripe

  • 750 gm Sugar granulated sugar; you can adjust the quantity to your preferred sweetness
  • 2 tbsp Oil vegetable oil or mustard oil

Prepare the Mangoes

  • Wash and peel the mangoes. Grate them using a box grater. Set aside.

Infuse the Spices

  • Heat the oil in a heavy-bottomed pan over medium heat. Add the bay leaves, cumin seeds, and red chilies. Sauté for a minute until the spices are fragrant and the chilies are slightly darkened.

Combine and Simmer

  • Add the grated mangoes and sugar to the pan. Stir well to combine. Reduce the heat to low and continue stirring frequently. If using, add the turmeric powder now.

Cook to desired consistency

  • Simmer the mixture gently, stirring continuously, until the mangoes soften and the mixture thickens into a syrupy consistency. The water from the mangoes will evaporate during this process. This will take approximately 30-45 minutes, depending on your stove and the amount of moisture in the mangoes.

Cool and Store

  • Remove the pan from the heat and let the Aam Ka Meetha Achar cool completely. Once cooled, store it in an airtight container in the refrigerator. The pickle will thicken further as it cools.
