A Middle Eastern dessert most popular in Levantine Countries like Lebanon, Syria, Palestine and Iraq. The name translates to Lebanese Nights and is a mildly sweet dessert with semolina and cream layers with a bed of pistachio slivers and usually served with the syrup. Hence the syrup can be adjusted to one's own choice and this is a perfect dessert for people with Diabetis, for they can enjoy it without the syrup. Delicate, melt in mouth and scrumptious dessert is loved by Arabs and can be whipped up very easily. A perfect one to complete your weekend meals. Orange blossom water and rose water are generally added but can be skipped totally and can be substituted with vanilla essence instead. There are umpteen number of variations for this lovely dessert but the most basic one is with semolina and cream. I have added pistachios not only on top but also in between the 2 layers for an added crunch. Enjoy!

Ingredients
  

  • Semolina 1 cup
  • Full fat milk 4 cups
  • Vanilla essence 1 tsp
  • Pistachio slivers 2/3 cup
  • Whipping cream/ Fresh cream 1 cup
  • Sugar 1 cup
  • Water 1 cup
  • Rose water 1/2 tsp
  • Lemon juice 1 tbsp

Instructions
 

  • Add semolina and milk to a pan and cook on a low heat until it thickens up and the raw smell vanishes. Stir in vanilla and mix well. Take it out into a dish.

  • Smoothen it out,cover and leave it on the kitchen counter until it cools down.

  • Sprinkle half of the pistachio slivers on the semolina and milk mixture and reserve the rest for the final garnishing.
  • Get the super chilled bowl and the whipping cream ready. Add whipping cream to this bowl and beat with an electric beater until soft peaks are formed. Fold this whipped cream into the pudding.

  • Garnish with the remaining pistachio slivers and refrigerate until chilled and ready to serve. Meanwhile prepare a one string consistency sugar syrup by adding both water and sugar to a pan.

  • Also add rose water and lemon juice to it. Serve this chilled dessert Layali Lubnan drizzled with sugar syrup on top as desired slicing it in shapes of one's own choice.
