Shrikhand is an Indian sweet dish made of strained Curd. Traditionally it is flavored with Elachi (Cardamom), saffron and nuts and for sweetness Sugar is used. Here is the healthy version of traditional Shrikhand with goodness of Jaggery and we have used Rose petal Preserve(Gulkand) to give it Rosy flavor. Often used in pan, Gulkand is a preserved version of rose petals that are mixed with sugar. However we have even made Gulkand with Jaggery. Roses are not only beautiful, but they are cool in nature. Gulkand itself tastes wonderful; and when added to this Shrikhand , it enhances and makes it taste awesome!! The base ingredient in Shrikhand is curd which is associated with strengthening of immune system. Curd aids in digestion and is rich in essential nutrients like Vitamin C, A and D. This Shrikhand with Rose flavor will be definitely loved by kids and grown-ups. This is a perfect summer dessert, light, sweet and refreshing!!

Ingredients
 

  • 1 Cup Hung Curd
  • 1/2 Cup Jagerry
  • 4-5 Cardamom pound them to form powder
  • 1 tsp Gulkand rose petal preserve
  • 1/2 tsp Syrup rose
  • 1 tbsp Grated Dry Fuits as per choice (pistachios, almonds, cashew grated dry fuits

Instructions
 

  • To make the hung curd. Put the cloth over the strainer and pour the curd over the cloth.Tie the cloth and leave it hanging overnight. We need to ensure that water is strained out of the curd fully. Approx. 1.5 cups of hung curd from 1 liter of curd.

  • Transfer hung yogurt to a large mixing bowl. Add Jaggery, rose syrup, cardamom powder, gulkand and whisk well until jaggery is dissolved and yogurt becomes creamy.

  • Pour Shrikhand into serving bowls, Garnish with grated dry fruits and chill for at least 1 hour before serving.

Recipe Notes

Serve this delicious Shrikand with Poori, or just as a  cool dessert after lunch or dinner.
When you mix Gulkand, the rose petals will not mix well in the Shrikhand, just leave them as is, don’t crush them too much, while eating they will give you delicious flavor.
You can also add fruits which are loved by your kids to this Shrikhand.
