  • Combine the lemongrass, lemon wedge and juice, garlic, green chilies, and ginger in a food processor. Process until a smooth paste forms. Set aside.
  • Roughly chop the spinach, onion, tomato, and ginger. Boil them together until softened. Once cooled, blend into a smooth paste.
  • In a bowl, crumble the paneer. Add lemon juice and salt. Mix well to combine. Divide the mixture into 12-15 equal portions and shape them into small balls.
  • Lightly oil an appam pan. Place the paneer balls into the circular molds. Cover and cook for 7-10 minutes.
  • Flip the appam and cook until golden brown on both sides. This creates a light and crispy texture.

  • Heat some oil in a wok or large pan. Add the spinach paste and sauté for 5 minutes until fragrant. Then, add the Thai green curry paste and cook for another minute to release its aromas.
  • Add salt to taste, coconut milk, and Thai chili sauce. Stir well to combine.
  • Gently add the cooked lemon paneer appam to the curry. Simmer for 5 minutes, allowing the flavors to meld.
  • Serve hot with noodles, rice, or your favorite bread.
