Ingredients
Aromatics & Spices
- 3 Onion spring onion, bulbs, chopped, medium sized
- 3 Onion spring onion, finely chopped, green tops
- 1/2 bunch Coriander including roots, roughly chopped
- 1 tbsp Coriander seeds
- 1 tbsp Cumin seeds
- 1/2 tbsp Peppercorn black
- 3 stalks Lemongrass bruised
- 3 Kaffir Lime leaves
- 1 tbsp Lemon zest
- 3 Chili finely chopped (adjust to taste), green
- 6 cloves Garlic minced
- 1 thumb-sized piece Galangal peeled and roughly chopped
- 1 Onion finely chopped, small
Vegetables
- 4 florets Broccoli cut into bite-sized pieces
- 4 Mushroom sliced
- 4 Long Bean trimmed and cut into 2 inch pieces
- 1/2 Bell Peppers cored and chopped, green
- 1/2 Bell Peppers cored and chopped, red
- 3 Baby Corn halved
Liquids & Seasoning
- 1.5 tsp Salt or to taste
- 1 tsp Sugar or to taste
- 2 tbsp Vegetable Oil
- 200 ml Coconut Milk
- 1 tbsp Lime Juice
- 1/2 cup Water
Instructions
Prepare the Spice Paste
- Dry roast coriander, cumin, and peppercorns in a dry pan until fragrant. Let cool.
- Combine roasted spices, lemongrass, kaffir lime leaves, small onion, spring onion greens and bulbs, coriander, galangal, lemon zest, garlic, and green chilies in a blender. Add a little water if needed and blend until a smooth paste forms.
Sauté Vegetables
- Clean and chop all vegetables.
- Heat 1 tbsp of oil in a wok or large pan. Add the prepared vegetables, sprinkle with a pinch of salt, and sauté until slightly softened. Remove from pan and set aside.
Cook the Curry
- Heat remaining 1 tbsp oil in the same pan. Add the spice paste and sauté until the raw smell disappears (about 2-3 minutes).
- Add the sautéed vegetables to the pan and cook for another 2 minutes.
- Stir in 1/2 cup of water and coconut milk. Bring to a simmer.
- Add salt and sugar to taste. Cover and simmer until the vegetables are tender (about 10-15 minutes).
- Stir in lime juice and mix well.
Serve
- Serve hot with steamed rice or your favorite side dish.
