Instructions

Prepare the Spice Paste

  • Dry roast coriander, cumin, and peppercorns in a dry pan until fragrant. Let cool.
  • Combine roasted spices, lemongrass, kaffir lime leaves, small onion, spring onion greens and bulbs, coriander, galangal, lemon zest, garlic, and green chilies in a blender. Add a little water if needed and blend until a smooth paste forms.

Sauté Vegetables

  • Clean and chop all vegetables.
  • Heat 1 tbsp of oil in a wok or large pan. Add the prepared vegetables, sprinkle with a pinch of salt, and sauté until slightly softened. Remove from pan and set aside.

Cook the Curry

  • Heat remaining 1 tbsp oil in the same pan. Add the spice paste and sauté until the raw smell disappears (about 2-3 minutes).
  • Add the sautéed vegetables to the pan and cook for another 2 minutes.
  • Stir in 1/2 cup of water and coconut milk. Bring to a simmer.
  • Add salt and sugar to taste. Cover and simmer until the vegetables are tender (about 10-15 minutes).
  • Stir in lime juice and mix well.

Serve

  • Serve hot with steamed rice or your favorite side dish.

Recipe Notes

Expert Tips for the Best Thai Green Curry:

  • For a richer flavor, toast the spices for a longer time, stirring frequently to prevent burning.
  • Adjust the amount of green chilies to control the level of spiciness. Start with fewer chilies and add more to taste.
  • Adding a tablespoon of fish sauce (optional) can enhance the umami flavor of the curry.
  • Garnish with fresh coriander leaves and a squeeze of extra lime juice before serving for an extra burst of freshness.
