  • 1/2 cup Kiwi Puree approximately 1-2 ripe kiwis, pureed
  • 1 tsp Vanilla Extract
  • 1/2 cup Milk may need slightly more or less depending on the consistency of the batter.
  • 50 gm Butter softened, unsalted
  • 2 Large Eggs

Prepare the Batter

  • Cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time. In a separate bowl, whisk together the flour, semolina, and baking powder.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Incorporate Kiwi and Vanilla

  • Gently fold in the kiwi puree and vanilla extract.

Add Milk

  • Stir in the milk, a little at a time, until the batter reaches a smooth, pourable consistency.

Prepare for Baking

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups well.

Bake the Muffins

  • Fill each muffin cup about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Garnish and Serve

  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Garnish with fresh kiwi slices and serve.
