Combine Dry Ingredients

  • Combine all-purpose flour, semolina flour, barley flour, sugar, cinnamon, nutmeg, baking soda, and salt in a large bowl. Mix well to ensure even distribution of ingredients.

Add Wet Ingredients

  • Add the melted butter to the dry ingredients. Gradually add milk, mixing until a soft dough forms. The dough should be slightly sticky but not overly wet. Add more milk, one tablespoon at a time, if necessary.

Incorporate Mix-Ins

  • Stir in the chopped nuts until evenly distributed throughout the dough.

Bake the Cookies

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
