Instructions

- Create a well in the center of the dry ingredients and add the instant yeast.
- Gently warm the water or milk. Gradually pour the warm liquid into the well while mixing with a spoon or spatula.
- Continue mixing until a thick, smooth batter forms. Be sure to incorporate all the dry ingredients from the sides of the bowl.
- Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm place for 30-60 minutes, or until small bubbles appear and the batter becomes spongy.
- After 30 minutes, check the batter. It should be bubbly and sticky. Gently stir the batter a couple of times with a ladle to release some of the air.
Pan-Fried Crumpets
- Heat a lightly oiled griddle or pan over medium heat.
- Pour a small ladleful of batter onto the hot griddle. If using crumpet rings, place them on the griddle first and pour the batter inside.
