Ingredients
Pasta
- 1/2 cup Pasta any shape
Vegetables
- 1 Bell Peppers medium, red
- 1 Bell Peppers medium, yellow
- 1/4 head Broccoli medium
- 1 Cucumber medium
- 1 Carrot small
- 6 Baby Corn
- 2 tbsp Olives
Dressing & Garnish
- 4 tbsp Vinaigrette
- 1 tbsp Almonds optional, slivered
- 1 1/2 tsp Salt or to taste
- Pepper black, to taste
Instructions
- Cook the pasta in a large pot of boiling salted water. Salting the water seasons the pasta from the inside out.
- Cook until the pasta is al dente, meaning it's firm to the bite but not crunchy. Drain the pasta in a colander and rinse under cold water to stop the cooking process and cool it down.
- While the pasta is cooking, chop all the vegetables into bite-sized pieces. Aim for a consistent size for even cooking and a pleasant texture.
- In a large bowl, combine the cooled pasta, chopped vegetables, and vinaigrette.
- Season with salt and pepper to taste. Toss gently to combine, ensuring the vinaigrette coats all the ingredients.
- Cover the bowl with cling film and chill in the refrigerator for at least 30 minutes. This allows the flavors to meld and the salad to become more refreshing.
- Just before serving, sprinkle with slivered almonds for added crunch and flavor, if desired.
Recipe Notes
Good To Know
- Tastes best when made at least 30 minutes before serving to allow the herb flavors to be absorbed.
- Adjust the quantity of vegetables to your liking.
- Store-bought mixed herbs work well, or use a combination of oregano and dried parsley.
- For the vinaigrette: Combine 4 tablespoons of extra virgin olive oil, 2 tablespoons of distilled white vinegar, and 1 teaspoon of oregano/parsley/mixed herbs in a small bottle and shake well. Alternatively, whisk the ingredients together in a bowl. Shake or whisk again before adding to the salad.
Expert Tips
- Customize your vinaigrette: Experiment with different vinegars like red wine vinegar or apple cider vinegar for unique flavor profiles. Add a touch of sweetness with a drizzle of honey or maple syrup.
- Make it a meal: Turn this pasta salad into a complete meal by adding grilled shrimp, salmon, or tofu for extra protein.
- Add a burst of freshness: Incorporate chopped fresh herbs like basil, mint, or chives just before serving for a vibrant flavor boost.
Storage Instructions
- Store leftover pasta salad in an airtight container in the refrigerator for up to 3 days. Add a splash of vinaigrette before serving to refresh the salad.
