- 1 cup Gooseberry also known as rasberries. finely chopped or sliced., cape gooseberries
- 1/4 cup diced Bell Peppers finely diced., red, small red bell pepper
- 1 Chili Pepper finely chopped. adjust to taste., finely chopped; or use 1 jalapeño, green
- 2 tablespoons Pomegranate Arils
- 3 tablespoons finely chopped Onion finely chopped., red, small red onion
- 1 1/2 tablespoons finely chopped Coriander
- 1/2 teaspoon Salt to taste.
- 1/4 teaspoon Pepper adjust to taste., black, freshly ground
- 1 teaspoon Lemon Juice optional, to taste. use only if needed to brighten the flavors.
- 2-3 teaspoons Agave Nectar optional, to taste. adds sweetness and balances acidity. or honey
Instructions
Prepare the Cape Gooseberries
- Chop or slice the cape gooseberries to your preferred size. Set aside in a medium-sized mixing bowl.
Add Remaining Ingredients
- Add the diced red bell pepper, finely chopped red onion, pomegranate arils, and finely chopped green chili (or jalapeño) to the bowl. Stir in the chopped cilantro.
Season and Mix
